They are more likely to perform the most thrilling and complex stunt scenes and come out unscathed whereas your actors and actresses, not trained or experienced in the techniques required for this, will be far more likely to end up in the Hospital.
This will put a strain on your budget and will delay the release of your next magnum opus.
When your leading actor has to act out a stunt role, their stunt double will perform the stunt. Their stunt skill and physical condition will determine the success of their role in your production. You will be able to hire stunt actors from the Stunt School.
